Traditional corn processing included nixtamalization: soaking and cooking dried corn in an alkaline lime solution. This dramatically increases the bioavailability of niacin in corn, making it nutritionally complete. Populations that ate corn as a staple without nixtamalizing it developed pellagra (niacin deficiency); those that nixtamalized it did not. To nixtamalize at home: dissolve 1 tablespoon food-grade calcium hydroxide per quart of water, add 1 cup dried corn, simmer 30 minutes, soak 8–12 hours, rinse and drain. The result is the basis of hominy and masa.

Roasted Winter Squash with Sage Butter
